For the Week That You Abstained From Eating Meat (Vegan) for Lent 

Before I started using portobella mushrooms instead of beef, this meal was a hit with my family's meat eaters.  

It's delicious, healthy, low-fat, and ready in no time.  

Even after I've served this substantial pierogi casserole multiple times, my hubby still loves it. 

Simply heating the broth and bulgur is all that's needed to make this simple bulgur salad.

Feel free to modify the recipe according to your taste. 

For example, you can substitute the vegetable broth with chicken broth if you'd like to include chopped cooked chicken.
